Calypso Thai Food: The Ultimate Hidden Culinary Oasis in Downtown Todos Santos
If you had told me a few years ago that one of my absolute favorite culinary experiences in Baja California Sur would involve an incredible bowl of green curry, I might have smiled and pointed you toward the nearest taco stand instead. But the food scene in Todos Santos is constantly evolving, and its ability to surprise even the most seasoned local travelers is exactly what makes it so magical.
Enter Calypso Thai Food—a true word-of-mouth hidden gem that has officially become my newest obsession.
A Hidden Oasis (Literally, Look for the Blue Truck)
Finding Calypso is half the adventure. Located right in downtown Todos Santos—conveniently tucked across the street from the popular el Burguer Shack—there is literally no sign showing you where to enter. Instead, you keep your eyes peeled for the signature blue food truck parked out front.
Once you spot it, you walk down a set of stone steps, pass through the entrance, and find yourself completely transported into a stunning, lush garden setting. The transition is instantaneous. The moment you cross the threshold, the dust of the main road disappears, and you are enveloped in a quiet, tropical oasis. The ambient lighting, the incredible service, and the general vibe are completely top-notch. It truly feels like you’ve been whisked away to another corner of the globe.
From Seattle to Baja: Meet the Chef
The secret behind Calypso’s phenomenal menu lies in the kitchen. The owner and head chef is originally from Mexico, but spent years living and cooking in the famous culinary scene of Seattle before bringing those skills back to Baja.
By blending that high-level Pacific Northwest execution with fresh local ingredients, he has created an authentic Thai menu that honors complex, traditional flavors. Because everything is made from scratch with pristine local produce, the kitchen is incredibly accommodating to dietary preferences. Almost all of their signature curries can easily be prepared fully vegan or vegetarian upon request.
And for my non-vegan friends reading this—don't worry! There are plenty of incredible traditional options on the menu for you, too. Calypso does an absolutely stellar job of making sure every single diner leaves completely blown away.
What to Order: The Plant-Based Show-Stoppers
The entire menu is fantastic, but if you want to order like an insider, here is the exact lineup you need to try:
The Starters: Kick off your evening by ordering a cold beer or a glass of wine paired with their perfectly seasoned edamame or crisp, fresh green bean starters. They are light, savory, and the ideal bite to enjoy while soaking in the garden ambiance.
The Green Curry: This dish is an absolute masterpiece. It is a rich, beautifully balanced green curry packed with perfectly cooked potatoes, crisp green beans, broccoli, and peppers. Every spoonful hits you with a bright, aromatic burst of fresh lime, basil, and cilantro. It is complex, comforting, and easily one of the best curries I have ever had.
Pro-Tips Before You Go
Because Calypso operates as an intimate garden space with a focused kitchen team, seating is limited and tables fill up incredibly fast. Here are two critical steps to take before you head out the door:
Send an Instagram DM: They operate primarily on a reservation basis for prime dinner slots. Be sure to drop them a direct message on Instagram to secure your table a day or two in advance.
Check Their Page for Updates: Because schedules can change seasonally in Baja, always glance at their latest social media posts for real-time updates on their operational hours before you drive into town.
